Great recipe - simple, not overly sweet and nice crunch

MICROWAVE PEANUT BRITTLE

Ingredients
1 cup of granulated sugar
1/2 cup of light corn syrup
1 1/2 cups of dry roasted peanuts
1 tbsp of butter
1 tsp pure vanilla extract
1 tsp of baking soda

Instructions
In a glass bowl, heat the sugar and the corn syrup in the microwave on high for 3 minutes, stir and heat for 2 more minutes.
Add the peanuts, stir and heat for 3-5 minutes until the mixture is a golden brown color.
Add the butter and vanilla. Stir until the butter is melted and microwave for one minute.
Stir in the baking soda (the mixture will foam with this step.)
I spread the mixture onto wax paper. Cool completely and then break into pieces.

I suggest spraying your spatula/spoon before spreading the brittle.

Pat made for our Christmas party..... it never made it to the party so she made a second batch and it never made it to the party
